This fully forged Slicing Knife has a VG-10 "Super Steel" core, supported by 8 layers of high-carbon stainless steel on each side so it slices with precision, accuracy and ease. The blade is shaped, honed and polished by hand to an extremely sharp edge with a Rockwell 60° rating. The blade is also hand-hammered, for a "tsuchime" dimpled surface that is unique to each knife. The tsuchime treatment reduces friction in use, and helps keep foods from sticking to the blade. The knives feature a full visible tang and very durable compressed wood handles that are triple-riveted to ensure durability. The handle is shaped very much like traditional French and German designs, with a nicely rounded grip that is contoured for comfort. Backed by a manufacturer's lifetime warranty.
